I'd guess that NBC knows it's Olympics audience pretty well (mainly women, I think) and display the sports they say they want to see, so gymnastics in the summer and figure skating in the winter.

You can catch some events on other NBC channels. I've seen boxing on CNBC and soccer on MSNBC.

The network channel tends to cover those events in which American (or UK) athletes are contanding for medals. The menu will change as we move on to other such sports.
